Description
Crispy Tostones with Garlic-Cilantro Sauce, a delicious twist on a classic dish.

- 2 large green plantains
- Vegetable oil for frying
- Salt to taste
- 1/2 cup fresh cilantro, chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, carefully add the plantain slices in batches, frying them for about 3-4 minutes or until they are golden and slightly soft.
- Remove the plantains from the oil and place them on a paper towel-lined plate to drain.
- Using the bottom of a glass or a flat surface, gently smash each fried plantain slice to about 1/2 inch thick.
- Return the smashed plantains to the hot oil and fry them again for about 2-3 minutes on each side until they are crispy and golden brown.
- Remove from the oil and drain on paper towels. Sprinkle with salt while still hot.
- To make the garlic-cilantro sauce, combine the chopped cilantro, minced garlic, olive oil, lime juice, salt, and black pepper in a small bowl. Mix well until combined.
- Serve the crispy tostones warm with the garlic-cilantro sauce on the side for dipping.
Notes
- For a spicy kick, add a chopped jalapeño or a pinch of red pepper flakes to the garlic-cilantro sauce.
- Try adding a sprinkle of crumbled feta cheese or cotija on top of the tostones for added flavor.
