Description

Tarta de torre de merengue, also known as Spettekaka, is a delightful dessert made of layered meringue, perfect for special occasions.


Ingredients

  • 2 cups granulated sugar
  • 1 cup egg whites (about 8 large eggs)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 cup finely chopped nuts (such as almonds or hazelnuts)
  • 1 cup whipped cream (for serving)
  • Fresh berries (for garnish, optional)


Instructions

  1. Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper and draw a circle about 8 inches in diameter in the center of the parchment as a guide.
  2. In a large mixing bowl, combine the egg whites, cream of tartar, and salt. Using an electric mixer, beat on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form. This should take about 5-7 minutes.
  4. Gently fold in the vanilla and almond extracts, along with the chopped nuts, being careful not to deflate the meringue.
  5. Spoon the meringue mixture onto the prepared parchment paper, using the circle as a guide. Create a tower shape by layering the meringue in a spiral, building up the sides to form a tall structure.
  6. Bake in the preheated oven for 2 to 2.5 hours, or until the meringue is dry and easily lifts off the parchment paper. Turn off the oven and let the meringue cool completely inside with the door slightly ajar.
  7. Once cooled, carefully remove the meringue from the parchment paper. Serve with whipped cream and garnish with fresh berries if desired.

Notes

  • For a chocolate twist, fold in 2 tablespoons of cocoa powder with the nuts.
  • To make it more festive, drizzle melted chocolate over the meringue before serving.
