Description

Tamal de Elote con Crema Dulce is a delightful sweet corn tamale served with a creamy topping, perfect for dessert or a special treat.


Ingredients

  • 2 cups fresh corn kernels (about 4 ears of corn)
  • 1 cup masa harina
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup crema or sour cream (for serving)
  • 1 tablespoon additional sugar (for crema, optional)


Instructions

  1. In a blender, puree the fresh corn kernels until smooth. Set aside.
  2. In a large mixing bowl, combine the masa harina, baking powder, and salt. Mix well.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the milk and vanilla extract, mixing until combined.
  4. Gradually add the masa harina mixture to the wet ingredients, stirring until just combined. Then fold in the pureed corn until fully incorporated.
  5. Prepare a steamer by filling it with water and bringing it to a simmer. If using corn husks, soak them in warm water for about 30 minutes to soften.
  6. If using corn husks, take one husk, place about 1/4 cup of the tamal mixture in the center, and fold the sides over to enclose the filling. If not using husks, you can spoon the mixture into small ramekins or a greased baking dish.
  7. Place the tamales in the steamer, standing upright if using husks. Cover with a damp cloth and steam for about 30-40 minutes, or until the tamales are firm and cooked through.
  8. While the tamales are steaming, mix the crema with the additional sugar if desired. Set aside.
  9. Once cooked, remove the tamales from the steamer and let them cool slightly before serving with the sweet crema.

Notes

  • For a savory twist, add diced jalapeños or cheese to the tamal mixture before steaming.
  • Substitute the sweet crema with a dollop of whipped cream or a drizzle of honey for a different flavor profile.
