Delicious Swedish Strawberry Cream Cake, perfect for any celebration.

- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for the cream)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Once the cakes are completely cool, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
- Place one cake layer on a serving plate. Spread half of the whipped cream over the top and layer with half of the sliced strawberries.
- Top with the second cake layer and spread the remaining whipped cream on top. Decorate with the remaining strawberries.
- Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Notes
- For a twist, try adding a layer of lemon curd between the cake layers for a zesty flavor.
- You can also substitute the strawberries with other berries like raspberries or blueberries for a mixed berry version.
