Description

Delicious Swedish Strawberry Cream Cake, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for the cream)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Once the cakes are completely cool, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  8. Place one cake layer on a serving plate. Spread half of the whipped cream over the top and layer with half of the sliced strawberries.
  9. Top with the second cake layer and spread the remaining whipped cream on top. Decorate with the remaining strawberries.
  10. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For a twist, try adding a layer of lemon curd between the cake layers for a zesty flavor.
  • You can also substitute the strawberries with other berries like raspberries or blueberries for a mixed berry version.
