Description

Pastel de crema y frutas, also known as Bløtkake, is a delightful creamy cake layered with fresh fruits and whipped cream, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruits (such as strawberries, blueberries, kiwi, and bananas)
  • Mint leaves for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  4. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.
  6. While the cakes are cooling, prepare the cream filling. In a large bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  7. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of whipped cream over the top.
  8. Arrange a layer of mixed fresh fruits on top of the whipped cream.
  9. Place the second cake layer on top and spread more whipped cream over the top and sides of the cake.
  10. Decorate the top with additional fresh fruits and garnish with mint leaves if desired.
  11. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For a chocolate version, substitute ½ cup of flour with cocoa powder in the cake batter.
  • You can use any combination of fruits based on seasonal availability or personal preference.
