Description

Pastel de Choclo Picante is a spicy corn delight that combines fresh corn, ground meat, and a variety of flavorful ingredients, baked to perfection.


Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 cup milk
  • 1/2 cup cornmeal
  • 1/2 cup grated cheese (such as Monterey Jack or cheddar)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper (any color)
  • 1 jalapeño pepper, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup sliced olives (optional)
  • 1/2 cup sour cream (for serving)


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a blender or food processor, combine the corn kernels and milk. Blend until smooth.
  3. In a large bowl, mix the cornmeal, cheese, cilantro, red onion, bell pepper, jalapeño, cumin, paprika, salt, and black pepper. Stir in the blended corn mixture until well combined.
  4. In a skillet over medium heat, heat the olive oil. Add the ground beef or turkey and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the black beans, diced tomatoes, chili powder, garlic powder, and onion powder. Cook for an additional 3-4 minutes until heated through.
  6. Spread the meat mixture evenly in the prepared baking dish. Pour the corn mixture over the top, spreading it out evenly.
  7. If using, sprinkle sliced olives on top of the corn layer.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
  9. Let cool for 5-10 minutes before serving. Serve with sour cream on the side.

Notes

  • For a vegetarian version, substitute the ground meat with additional beans or lentils.
  • Add a layer of sliced avocado on top before serving for extra creaminess and flavor.
