Description
Pastel de Choclo Picante is a spicy corn delight that combines fresh corn, ground meat, and a variety of flavorful ingredients, baked to perfection.

- 2 cups fresh or frozen corn kernels
- 1 cup milk
- 1/2 cup cornmeal
- 1/2 cup grated cheese (such as Monterey Jack or cheddar)
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper (any color)
- 1 jalapeño pepper, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup diced tomatoes (fresh or canned)
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup sliced olives (optional)
- 1/2 cup sour cream (for serving)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a blender or food processor, combine the corn kernels and milk. Blend until smooth.
- In a large bowl, mix the cornmeal, cheese, cilantro, red onion, bell pepper, jalapeño, cumin, paprika, salt, and black pepper. Stir in the blended corn mixture until well combined.
- In a skillet over medium heat, heat the olive oil. Add the ground beef or turkey and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the black beans, diced tomatoes, chili powder, garlic powder, and onion powder. Cook for an additional 3-4 minutes until heated through.
- Spread the meat mixture evenly in the prepared baking dish. Pour the corn mixture over the top, spreading it out evenly.
- If using, sprinkle sliced olives on top of the corn layer.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
- Let cool for 5-10 minutes before serving. Serve with sour cream on the side.
Notes
- For a vegetarian version, substitute the ground meat with additional beans or lentils.
- Add a layer of sliced avocado on top before serving for extra creaminess and flavor.
