  • 2 tablespoons warm water
  • 1 tablespoon lemon zest
  • ½ cup fresh lemon juice
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, combine the saffron threads and warm water. Let it steep for about 10 minutes.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, saffron mixture, lemon zest, and lemon juice.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
  9. For the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

  • For added flavor, consider folding in ½ cup of chopped nuts or dried fruits into the batter before baking.
  • If you prefer a more intense lemon flavor, increase the lemon zest to 2 tablespoons and add an extra tablespoon of lemon juice to the batter.
