Description

Delight in every bite with this delicious Pastel “Aspiradora” de mazapán verde, a sweet treat made with almond flour and marzipan.

Ingredients

Scale
  • 2 cups almond flour
  • 1 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1/2 cup green marzipan
  • 1/2 cup dark chocolate, chopped
  • 1 tablespoon coconut oil

Instructions

  1. In a large mixing bowl, combine the almond flour, powdered sugar, cocoa powder, and vanilla extract. Mix well until combined.
  2. Add the softened butter and milk to the dry ingredients. Stir until a dough forms. If the mixture is too crumbly, add a little more milk, one teaspoon at a time, until it holds together.
  3. Divide the dough into two equal portions. Roll each portion into a log shape, about 1 inch in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour to firm up.
  4. While the dough is chilling, knead the green marzipan until it is soft and pliable. Roll it out into a thin sheet, about 1/8 inch thick.
  5. Once the dough is chilled, remove it from the refrigerator and unwrap it. Roll each log in the marzipan sheet, pressing gently to adhere. Trim any excess marzipan from the ends.
  6. In a microwave-safe bowl, combine the chopped dark chocolate and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  7. Dip each marzipan-covered log into the melted chocolate, ensuring it is fully coated. Place on a parchment-lined baking sheet to set.
  8. Allow the chocolate to harden at room temperature or refrigerate for faster setting. Once set, slice into bite-sized pieces and serve.

Notes

  • For a festive touch, consider adding a few drops of food coloring to the marzipan to create different colors.
  • You can also substitute the dark chocolate with white chocolate for a sweeter flavor.
