Description

Mofongo de Plátano Verde con Mariscos is a delicious Puerto Rican dish made with green plantains and a variety of seafood, creating a flavorful and satisfying meal.


Ingredients

  • 3 medium green plantains, peeled and cut into 1-inch pieces
  • 4 cups vegetable oil (for frying)
  • 1 teaspoon salt
  • 4 cloves garlic, minced
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup cooked calamari, sliced
  • 1 cup cooked mussels, shelled
  • 1/4 cup chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon black pepper


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Once hot, carefully add the plantain pieces and fry until golden brown, about 5-7 minutes.
  3. Remove the plantains and drain on paper towels.
  4. In a large bowl, mash the fried plantains with a fork or potato masher.
  5. Add the minced garlic, salt, and black pepper, mixing well.
  6. Gradually add the chicken broth to achieve a creamy consistency.
  7. In a separate skillet, combine the shrimp, calamari, and mussels over medium heat.
  8. Add the lime juice and chopped cilantro, cooking for about 3-5 minutes until heated through.
  9. To serve, form the mashed plantain mixture into a bowl shape and fill the center with the seafood mixture.
  10. Drizzle with any remaining broth from the skillet.

Notes

  • For a spicier version, add chopped jalapeños or a dash of hot sauce to the seafood mixture.
  • You can also substitute the seafood with grilled chicken or vegetables for a different twist.
