- 3 medium green plantains, peeled and cut into 1-inch pieces
- 4 cups vegetable oil (for frying)
- 1 teaspoon salt
- 4 cloves garlic, minced
- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked calamari, sliced
- 1 cup cooked mussels, shelled
- 1/4 cup chicken broth
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 1/2 teaspoon black pepper
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Once hot, carefully add the plantain pieces and fry until golden brown, about 5-7 minutes.
- Remove the plantains and drain on paper towels.
- In a large bowl, mash the fried plantains with a fork or potato masher.
- Add the minced garlic, salt, and black pepper, mixing well.
- Gradually add the chicken broth to achieve a creamy consistency.
- In a separate skillet, combine the shrimp, calamari, and mussels over medium heat.
- Add the lime juice and chopped cilantro, cooking for about 3-5 minutes until heated through.
- To serve, form the mashed plantain mixture into a bowl shape and fill the center with the seafood mixture.
- Drizzle with any remaining broth from the skillet.
Notes
- For a spicier version, add chopped jalapeños or a dash of hot sauce to the seafood mixture.
- You can also substitute the seafood with grilled chicken or vegetables for a different twist.
