Description

Ingredients

  • 1 jalapeño, seeded and diced (optional)
  • 2 cups tortilla chips, roughly crushed
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • Sour cream and salsa for serving (optional)


Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and jalapeño (if using). Sauté for about 5 minutes, or until the vegetables are softened.
  3. Add the crushed tortilla chips to the skillet and stir to combine with the vegetables. Cook for an additional 2-3 minutes, allowing the chips to warm and slightly crisp up.
  4. Pour the egg mixture over the tortilla chip mixture in the skillet. Gently stir to combine and cook for about 5-7 minutes, or until the eggs are set but still slightly soft. Stir in the shredded cheddar cheese until melted.
  5. Remove from heat and sprinkle with fresh cilantro. Serve immediately with sour cream and salsa on the side, if desired.
