- 1/4 cup milk
- 1/2 teaspoon salt

- 2 tablespoons olive oil
- 1 small onion, diced
- 1 small bell pepper, diced (any color)
- 1 jalapeño, seeded and diced (optional)
- 2 cups tortilla chips, roughly crushed
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- Sour cream and salsa for serving (optional)
Instructions
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and jalapeño (if using). Sauté for about 5 minutes, or until the vegetables are softened.
- Add the crushed tortilla chips to the skillet and stir to combine with the vegetables. Cook for an additional 2-3 minutes, allowing the chips to warm and slightly crisp up.
- Pour the egg mixture over the tortilla chip mixture in the skillet. Gently stir to combine and cook for about 5-7 minutes, or until the eggs are set but still slightly soft. Stir in the shredded cheddar cheese until melted.
- Remove from heat and sprinkle with fresh cilantro. Serve immediately with sour cream and salsa on the side, if desired.
Notes
- For a heartier dish, add cooked chorizo or breakfast sausage to the skillet along with the vegetables.
- Customize the cheese by using pepper jack for a spicier kick or a blend of cheeses for more flavor.
