Description

Lefse de patata noruego is a traditional Norwegian potato flatbread that is deliciously easy to make and perfect for serving warm or at room temperature.


Ingredients

  • 2 cups mashed potatoes (about 2 large potatoes)
  • 1/4 cup unsalted butter, softened
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 cups all-purpose flour (plus extra for rolling)


Instructions

  1. Begin by peeling and boiling the potatoes until tender. Drain and mash them until smooth. Allow the mashed potatoes to cool completely.
  2. In a large mixing bowl, combine the cooled mashed potatoes, softened butter, heavy cream, salt, and sugar. Mix until well combined.
  3. Gradually add the flour, one cup at a time, mixing until a soft dough forms. You may need a little more or less flour depending on the moisture of the potatoes.
  4. Divide the dough into 8 equal portions. Roll each portion into a ball and flatten slightly.
  5. On a floured surface, roll each piece of dough into a thin circle, about 1/8 inch thick. Use additional flour as needed to prevent sticking.
  6. Heat a griddle or large skillet over medium heat. Cook each lefse for about 1-2 minutes on each side, or until lightly browned and cooked through.
  7. Remove from the skillet and let cool on a wire rack. Serve warm or at room temperature.

Notes

  • For a sweeter version, add a teaspoon of cinnamon to the dough and serve with sugar and butter.
  • Try using different types of potatoes, such as Yukon Gold, for a creamier texture.
