Description

Savory Piquillo Pepper and Sardine Empanadas that are easy to make and delicious.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup cold water
  • 1 can (3.75 ounces) sardines in olive oil, drained and chopped
  • 1/2 cup piquillo peppers, chopped
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 egg, beaten (for egg wash)


Instructions

  1. In a large bowl, combine the flour and salt. Add the chilled butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Gradually add the cold water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. In a skillet over medium heat, add a splash of olive oil and sauté the onion until translucent, about 3-4 minutes. Add the garlic and cook for an additional minute.
  3. Stir in the chopped sardines, piquillo peppers, smoked paprika, and black pepper. Cook for 2-3 minutes until heated through. Remove from heat and let cool slightly.
  4. Preheat the oven to 375°F.
  5. On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles using a 4-inch round cutter.
  6. Place a tablespoon of the sardine mixture in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
  7. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  8. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the filling.
  • You can also substitute the sardines with canned tuna or chicken for a different flavor profile.
