Description

Callos a la Madrileña is a traditional Spanish dish made with beef tripe, chorizo, and morcilla, simmered in a rich and flavorful sauce.


Ingredients

  • 2 pounds beef tripe, cleaned and cut into bite-sized pieces
  • 1 pound beef shank, cut into chunks
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup chickpeas, cooked or canned, rinsed and drained
  • 1/2 pound chorizo, sliced
  • 1/2 pound morcilla (blood sausage), sliced
  • Salt and black pepper to taste
  • 1/4 cup olive oil
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, combine the beef tripe, beef shank, onion, garlic, bay leaf, and enough water to cover the ingredients. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the tripe is tender. Skim off any foam that rises to the surface.
  2. Once the tripe is tender, remove the bay leaf and onion. Add the smoked paprika, sweet paprika, cayenne pepper, diced tomatoes, and chickpeas to the pot. Stir well to combine.
  3. In a separate skillet, heat the olive oil over medium heat. Add the chorizo and morcilla, cooking until browned and slightly crispy.
  4. Transfer the cooked chorizo and morcilla to the pot with the tripe mixture. Stir to combine and season with salt and black pepper to taste.
  5. Simmer the mixture for an additional 30 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier version, add more cayenne pepper or a diced jalapeño.
  • Serve with crusty bread or over rice for a heartier meal.
