Description

Ingredients

  • 2 pounds salt cod (bacalao), soaked in water for 24-48 hours, changing water frequently
  • 1 cup olive oil
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Freshly ground black pepper to taste


Instructions

  1. After soaking the salt cod, drain and rinse it thoroughly. Cut the fish into large pieces and pat dry with paper towels.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  3. Gently add the pieces of salt cod to the skillet, skin side down. Cook for about 5-7 minutes, allowing the fish to sear lightly.
  4. Carefully flip the fish pieces and cook for another 5-7 minutes, until the fish is cooked through and flakes easily with a fork.
  5. Remove the fish from the skillet and set aside. Reduce the heat to low and continue to cook the oil and garlic mixture, stirring occasionally, for about 10 minutes. This will help the flavors meld together.
  6. Return the fish to the skillet, spooning the oil and garlic over the top. Cook for an additional 2-3 minutes, allowing the fish to absorb the flavors.
  7. Season with salt and freshly ground black pepper to taste. Sprinkle with chopped parsley before serving.

Notes

  • For a creamier texture, you can add a tablespoon of unsalted butter to the oil before adding the fish.
  • If you prefer a spicier dish, add more red pepper flakes or a dash of hot sauce.
  • Serve with crusty bread to soak up the delicious sauce.
