- 2 cups yuca (cassava), peeled and cut into chunks
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled queso fresco (or feta cheese)
- 1/4 cup cornmeal
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon black pepper
Instructions
- In a large pot, bring salted water to a boil. Add the yuca chunks and cook for about 20-25 minutes, or until tender. Drain and let cool slightly.
- Once cool enough to handle, mash the yuca in a large bowl until smooth.
- Add the cornmeal, salt, garlic powder, and black pepper to the mashed yuca. Mix until well combined.
- Divide the mixture into 8 equal portions and shape each portion into a patty about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat. Cook the yuca patties for about 4-5 minutes on each side, or until golden brown and crispy.
- In the last minute of cooking, sprinkle shredded mozzarella and crumbled queso fresco on top of each patty. Cover the skillet with a lid to melt the cheese.
- Once the cheese is melted, remove the patties from the skillet and serve hot.
Notes
- For a spicy kick, add chopped jalapeños or red pepper flakes to the yuca mixture.
- Try adding herbs like cilantro or parsley for extra flavor in the patties.
